Confrérie de la Chaîne des Rôtisseurs Bailliage de Kansas City MEDIEVAL ZINFANDEL FEAST Saturday, January 27, 2001 at JACK’S STACK BARBEQUE 101 West 22nd Street, Kansas City, MO Review by: Kay Moffat Vice Chargee' de Presse The origins of the Chaine des Rotisseurs were remembered when the Kansas City Bailliage enjoyed a medieval Zinfandel dinner on January 27th. It was a banquet fit for a king, hosted by Jack Fiorella at his new restaurant, Jack's Stack Barbeque in Kansas City. Many of us arrived in medieval costume. At the reception, we sipped wassail while indulging in hickory grilled salmon, baby lamb ribs, fresh fruit, and smoked cheeses. On display were the sumptuous foods that would be served at the feast to follow. Following the first course of smoked chicken and vegetable soup, we were treated to several delicious dishes: crown prime short ribs with green peppercorn sauce, roasted goose with currant sauce, rabbit sausage with mustard sauce, and suckling pig with hot sauce. Hickory roasted vegetables and oven-roasted potatoes accompanied the meat. Dessert was bread pudding with rum sauce, served with coffee and Calvados. The wines served throughout the evening were favorite Zinfandels brought by each of us from our private collections. We enjoyed stepping back into the past at this medieval banquet.
