Kansas City has been fortunate to experience fine
dining at Café Allegro for over seventeen years. This
award winning restaurant owned by Maître de Table /
Commandeur Stephen Cole is always rated by the citizens
as one of their favorite spots. Therefore, when Stephen
hosted the Kansas City Bailliage for a retrospective
dinner we were very honored. On February 5, 2002 the
members attended the event at the Kansas City, Missouri
restaurant and experienced many of the wonderful dishes
from past years and old menus.
Members arrived and were welcomed with Chateau Pech
Redon, Languedoc, 2000. As guests conversed Chinese
peanut chicken, Asian tuna tartar, duck pastrami
prosciutto and crab cakes were passed. The flavors were
just as tantalizing as we remembered.
Dinner began with grilled seafood sausage with Tarragon
Beurre Blanc which was served with Vouvray, Clos du
Bourg, S.A. Huet, Sec, 1999. The flavors were mild,
delicate and well blended. Pecan fired jumbo asparagus
with Nicoise olive vinaigrette came next. The wood flavor
and dressing were a perfect combination.
The subsequent course was grilled snapper Yucatan style,
Huachinango Veracruzana. EVO, Guelbenza, Ribera del
Queiles, 1999 was poured . This creative preparation was
followed by poulet Relais de Mougin. The
essence of this dish took each of us to Provence. Chateau
Ferry Lacombe, Cuvee Lou Cascai, Cote de Provence, 1998
accompanied the course.
The main course of the evening was peppered filet of beef
with Maytag Blue Cheese, dauphine potatoes, and haricot
verts. The synergy of this presentation was
extraordinary. The chef, Michael Shibel, created this
course so that the flavors were in perfect harmony.
Cabernet Sauvignon, Marston Family Vineyards, 1998
provided a nice balance.
As we ate our way down memory lane, it was a real treat
to have a small sampling of both aluminum bananas and
warm chocolate soufflé. The dessert was served with
Banyuls, Comaine du Mas Blanc-Dr. Parce, Rimage, 2000,
which certainly enhanced its richness. Coffee followed--
which was Stephens own custom blend. What a finale!
The evening was an absolute delight. Maître de Table /
Commandeur Stephen Cole introduced chef Michael Shibel,
sous chef Mante Scottin and manager Jack Meyers. They,
along with the very professional staff made the dinner
such a success. We all hope to enjoy many more years of
dining at Café Allegro.
